Procedure
- Sauté spinach in 1 tbsp. olive oil. When it starts to get tender, add 6 tbsp. of olive oil, salt and black pepper.
- Stir in the oil for a few minutes until it is completely tender. Then puree the spinach with a hand blender.
- Fry the salmon in sunflower oil at high temperature until it is medium fried. When the fish is almost done, add the honey and pine nuts to the frying pan.
Presentation
Arrange the spinach puree in a deep dish and put the fish with the raw side down in the puree. Then sprinkle the pine nuts and feta cheese on top.
