Procedure
- Dice the cucumber (or make cucumber balls with a melon baller) and thinly slice the spring onion.
- Melt 2 tbsp unsalted butter in a frying pan and fry the fish over a medium heat for around 4 minutes on each side.
- Make the sweet soy sauce by adding 1 tbsp brown sugar to the frying pan and letting it dissolve in the butter. Squeeze the juice of 1 lime into the pan then add 2 tbsp soy sauce and mix. Finally, season the fish with ground pepper.
- Dish the cucumber and spring onion out on plates. Top with the fried fish then pour over the sauce from the frying pan.
